Spinach & Tortellini Soup

This is a great, Italian-inspired soup that is filling and incredibly easy to whip up!


1 package cheese or meat tortellini

2 cups tomato sauce

1/2 onion, diced

1-2 cloves minced garlic

2 tsp oregano

3 cups fresh spinach

2 whole tomatoes, diced

salt & pepper

1 tablespoon olive oil

parmesan cheese to top


  1. Heat olive oil in large pot, add onion and sauté until translucent
  2. Add garlic and tomatoes, turn down heat so the garlic doesn’t burn
  3. In separate pot, cook tortellini in water according to package directions, except do not cook through, stop and drain before they are completely softened. This is so they won’t get soggy in the soup
  4. Add tomato sauce and some water to desired thickness of soup. Stir in fresh spinach.
  5. Shake on the oregano, salt and pepper to taste
  6. Stir in tortellini
  7. Top with parmesan cheese and enjoy 🙂
