Spicy Chorizo “Dirty Rice”

This recipe was an idea given to me by my lovely friend Katie when I messaged her “I am out of recipe ideas for this week… I have spicy chorizo I need to use but don’t know what to do with it” and she suggested red beans and cilantro and I am so glad I gave it a go! This is spicy, protein-packed and delicious 🙂

Ingredients: 

1 cup white or brown rice

2 cups water

1 cube vegetable stock

1/2 cup corn

1 spicy chorizo, cut into small bite-sized pieces

1 tomato, diced

Handful of cilantro, chopped

1 cup red beans, cooked and rinsed

1 onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

Directions:

  1. Boil water in pan with vegetable stock cube so it dissolves. Add rice and simmer for about 25 minutes until cooked
  2. Heat olive oil in a saucepan. Add onions and chorizo and sauté until onions are translucent and chorizo is browned, making sure to stir a bit so it doesn’t burn. Turn down heat and add tomato and garlic.
  3. Add corn and beans and simmer mixture, allowing excess water to cook off of the beans, about 5-8 minutes
  4. Mix into rice when both components are ready
  5. Garnish with cilantro and enjoy!
