Warm Kale & Quinoa Salad

Happy Saturday everybody! I know in my food post last week I said I am sick of salads, which is true with one exception – warm salads. The change of weather in Madrid brings with it the desire to change the temperature of my food, and this is a great alternative to a cold salad. I also find it much more enjoyable to eat kale cooked, so this is an all-around winner. It is savory, super easy to make, and relatively healthy. Leave out the bleu cheese if you want to keep it vegan, and add bacon if you want to make it extra delicious 🙂


1 cup quinoa

1 tablespoon powder or 1 cube vegetable stock

2 cups water

2 cups kale, washed and cut

1 apple, diced

1-2 tablespoons bleu cheese crumbles

1 small clove garlic, minced

Juice of lemon wedge

olive oil

balsamic vinaigrette

Salt & pepper


  1. Cook quinoa in water and vegetable stock, set aside covered
  2. Heat olive oil on low in saucepan
  3. add minced garlic, sauté carefully to not burn the garlic
  4. Add kale and stir to coat evenly with oil and garlic, cook until wilted
  5. Scoop desired amount of quinoa onto plate, top with garlic/kale mixture
  6. Add blue cheese crumbles so they melt a bit from the heat
  7. Top with diced apples
  8. Drizzle a tiny bit of balsamic
  9. Squeeze lemon juice
  10. Add salt & pepper to taste
