Easy 5 ingredient, VEGAN, Lemon Tahini Dressing


It has been a crazy long time since I have posted a Saturday recipe. There are many reasons for my hiatus – working a summer internship on a hippie farm, where I wasn’t always able to cook what I wanted to, being too busy (the excuse we all have for everything) and having just lost general motivation.

I am back in a routine working again in Madrid, and I hope to get back on top to schedule these posts, share some of the recipes I’ve been loving lately, and getting back into meal prep! I am trying to transition to being “mostly vegan” but occasionally I will feature non-vegan recipes. I am a human, and cheese is delicious, so that’s just how it’s gonna go.

Without further adieu, here’s an easy salad dressing you can make with just 5 ingredients. Pairs soooo well with kale salads, or any salads really. It’s a creamy dressing without any cream!


1 clove garlic

1 cup of tahini

Juice of 1/2 to 1 lemon, depending on how tangy you like it

cayenne pepper

salt & pepper

water (ok, 6 ingredients I guess)


Blend everything in a blender or with an immersion blender, and add water to reach desired consistency. Pour into a jar and let sit in the fridge so the ingredients can mix together and “marinade” to get the best flavor. Serve over kale salad! Or any salad! Enjoy!
