Vegan Lentil Sloppy Joe’s

This is a ridiculously easy twist on one of my favorite summertime meals, the sloppy joe. In all honesty, it’s essentially lentil stew on a bun, but it really is hearty and filling, and is a much healthier option than the MANWICH version.

This makes about 4 servings

INGREDIENTS

2 cup lentils, rinsed

2 cups tomato sauce

1 onion, finely chopped

2 cloves minced garlic

1 red pepper, finely chopped

1 zucchini, finely chopped

1 tsp salt

fresh cracked black pepper

hamburger buns

1 tsp cumin

1 tsp chili powder

water

STEPS

  1. Sauté onions, zucchini, and red pepper in olive oil, on medium heat. Once softened, add the garlic.
  2. Stir on the lentils, and mix together for a few minutes
  3. Add 1 cup of tomato sauce and continue to stir, letting the sauce bubble slightly to cook the lentils.
  4. Continue stirring on low to medium heat, adding the rest of the tomato sauce, the cumin, chili powder, and salt & pepper. Add extra water if desired, to thin the consistency and further cook the lentils if needed.

IMG_5547.jpgSimmer on low-medium heat for about 45 minutes, until lentils are soft.

Scoop some on a bun and enjoy!
