This is a ridiculously easy twist on one of my favorite summertime meals, the sloppy joe. In all honesty, it’s essentially lentil stew on a bun, but it really is hearty and filling, and is a much healthier option than the MANWICH version.
This makes about 4 servings
2 cup lentils, rinsed
2 cups tomato sauce
1 onion, finely chopped
2 cloves minced garlic
1 red pepper, finely chopped
1 zucchini, finely chopped
1 tsp salt
fresh cracked black pepper
1 tsp cumin
1 tsp chili powder
- Sauté onions, zucchini, and red pepper in olive oil, on medium heat. Once softened, add the garlic.
- Stir on the lentils, and mix together for a few minutes
- Add 1 cup of tomato sauce and continue to stir, letting the sauce bubble slightly to cook the lentils.
- Continue stirring on low to medium heat, adding the rest of the tomato sauce, the cumin, chili powder, and salt & pepper. Add extra water if desired, to thin the consistency and further cook the lentils if needed.
Simmer on low-medium heat for about 45 minutes, until lentils are soft.
Scoop some on a bun and enjoy!
